third party apps weren't allowed to run in the background, but when
they were in the foreground, they could be preempted by any of apple's
apps, including mail and the ipod.
on jailbroken phones, you can do a ps -x and see all the processes that
are running. it's a *lot* more than one process.

And only a single one from the iTunes store
That is not multitasking. If it were, it would not make any distinction
between apples build-in apps and 3rd party apps
