I'd like to be able to able to sync my task, jotter and calendar but I don't
use (or want to start using) Outlook or the Lotus apps that the P800/P900
support. I'd like to find something like the Palm Desktop software, a very
basic and self-contained app that will allow me to sync data between my
phone and my PC. Does such a thing exist? TIA for any help.

Since you want "a very basic and self-contained app that will allow me
to sync data", I recommend you take a look at Lotus Organizer from IBM.
It syncs OK with P800 and Palm PDAs. Only thing you might miss is the
Notes-field of Tasks.
If you want something that does not cost money, I can't help you.
