Midi is played by the phone, polyphonic sounds are sample
like "recorded"

"Polyphonic" merely means 'multiple sounds' (poly + phonic). In the case of
SE phones, polyphonic ringtunes are MIDI files. The sounds are all stored in
the phone in the form of instruments - separate samples for each type of
sound - strings, piano, various drums etc etc. The MIDI file is merely a
string of commands to play these sounds at a particular pitch and for a
particular length of time. This way the MIDI file itself is very compact and
doesn't require a lot of storage space. This was important way way back in
the past when the MIDI standard was invented (the mid-80s or something), and
ironically, now too with cramped-storage mobile phones, hehehe!

I'm asking this because when I send a MIDI-file to my phone the volume is
very low. Polyfonic sounds sound louder. Why?

You have just contradicted yourself!
MIDI files are opened the same way on your phone as they are opened on your
PC. If you want to make them sound louder, use a program such as PSM Player
(or other MIDI editor) to raise the either the master volume or the volume
of the instrument/track in question.

First, ericsson models tend to have low-volume when ringing. Minor problem.
Second, MIDI files you find on the internet tend to have been created at
less-than-full volume. The person composing it is more worried about
balance between one instrument and another, and whatever device playing it
(like a PC or an organ) won't have volume issues. I think a lot of people
start with all tracks at 50% so they can adjust one track either up or down
without changing all of the others.
Third, stop saying "polyphonic vs. MIDI," or one of us shall be forced to
club you over the head with an eighth note.
