As per page 78 of the manual:
Menu:Settings:Personalize:Home Screen:Home Keys
then select what you'd like for each arrow.

V3 arrow buttons - can I change them?
Bruce, that does not allow you to reset the key function. It only allows
you to select whether to display the icons or not.

Maybe your phone has a different menu structure but it worked on mine.
When you select Settings, Personalize, Home Screen, Home Keys you are
taken to a menu that has several items. The first is to set Icons to
Show or Hide. Below that you will see menu items for Up, Down, Left,
Right and the other soft keys. You can select whatever you like for each
key.
I made UP my Address Book, Down is Messages, Left is Web Access and
Right is Recent calls. I also made the right softkey go to Bluetooth.
When you highlight the entry and select 'Change' you will be able to
select any feature, tool or even a particular game for instant access.
Unless you have some other firmware version (mine is Cingular) you
should be able to do the same.

bendonnelly - out of the box, the V3 arrow assignment will be ...
Left: Recent Calls
Up: Themes
Down: Phone book
Right: Ring Styles
It would seem that yours have already been changed. As Bruce said,
from the settings/personalize screen, select Home Keys and then change
the left down up right buttons as you require. They are the ones just
under the Icons: Hide line.
