I know there seems to be a newer version than the shipping version of this
firmware, tho largely unconfirmed .. my main curiosity is actually to do
with how an upgrade on this phone is actually performed?

Without a pop-port or similar connector, how does a service center perform
an upgrade? I'm thinking perhaps the symbian S60 phones can upgrade the
firmware themselves, with an executable program installed on the phone?
Would certainly make DIY updates easier ..

Symbian phones are very flexible. Updates can be loaded from a program
on the phone and there's nothing special about how the program gets there.
It could be loaded onto a card and run from there. Or, a short update
could be sent to the phone as a SIM update message. Or it could be
sent via BlueTooth or infra-red. There are any number of ways to do
it. Which one is used depends on who has responsibility for the phone.

Not for a firmware update it can't.

Not a chance! Firmware updates can not be performed via IR or BT, and a
decent professional solution should be used. Alternatively, as the phone is
probably within its warranty period, use a Nokia Service Centre.
