Go to Notes in your menu, write it and send via bt to a device in range. Or
install Mobiluck, an application to chat via bt

Trouble with that is, the recipient doesn't get an alert that a message is
    coming in.

We can recommend Oxygen Phone Manager II for Symbian-based phones for
this purpose. You can download the trial version here:
    http://www.opm-2.com/symbian/

If you have any questions and/or suggestions, concerning our
program, feel free to post them on our official forum

Except that I suspect the OP was looking for a more portable solution...

(assuming you mean accept...) When someone tries to send me a file via
bluetooth, my 6600 displays a pop-up message along the lines of "Accept
bluetooth transfer from <name>?" I have the option to accept or decline.

But if the phone's in my pocket, I won't know anything about it anyway, which
was really my point. There's no alert to tell me someone's trying to send
    something in the first place.
