Usually yes (depends on flashing software&service center). But you always
can use Nokia PCSuite or Oxygen Phone Manager II to backup/restore your
phone's information.

Flashing lose settings on 8310?
If I have my 8310's firmware flashed to a later level then will I
lose the memory settings (phonebook, profiles, caller groups,
personal ringtones, etc)?

That seems a bit of logic to me, but I guess the phonebook, or data backup,
is a part of the upgrade procedure (moreover the data transfer is one of the
service menu's options).

It is not part of the upgrade procedure, sadly. All data will be wiped.
Back it up using Nokia PC Suite before flashing.
