Can anyone tell me where to get the Mobile Music Polyphonic software for
free?

The free Nokia PC Suite contains a midi editor that lets you pick what's
played when it's uploaded to your phone.
Polyphonic files are just midi files anyway. You can upload them directly to
the Tones folder and use them with your phone. However, you need to bare in
mind that your phone can't play 1024 instruments at once like your sound
card, and in fact can only play 8 (depends on phone). Some instruments take
up to 16 polyphonic channels to play - this is where the midi editor from
Nokia allows you to play around with the channels.

Polyphonic is MIDI. (for nokia and SE phones at least).
Mp3 does not convert to MIDI. they are very different formats. you could
convert it to WAV, and play it with a series 60 phone, but thats about it.
You can however make midi files quite easily with any MIDI editor, there are
several free ones about.
