If I change the background (eg. using a saved image), how
can I set it back to the colourful default one that the unit comes with?.

Fair point, but given the newsgroup it's probably his nokia phone. Or his hat...
Isn't the original image stored in the 'gallery' somewhere?

but seriously
If it is a Nokia then Logomanager or Mobimb depending on what Model Nokia
will reset the default logo and background

Well I couldn't find a way. If I selected the recipient from the phonebook, I
was only given the default number. I just tried on my 6100 and I can select
which number. Maybe it ws a firmware thing on the 6210.
