My Moto v180's phonebook has a number of properties (like phone number type:
Mobile, Work, Home....) that are lost when entries are copied to SIM.
Is this because the v180's software just isn't that great, or is there some
standard format for SIM phonebook entries that doesn't include much beyond
name/number?

It's a SIM restriction. Along with other SIM-related matters,
the SIM file EF-ADN (abbreviated dialling number) and EF-FDN
(fixed dialling number) formats are defined in GSM 11.11.
You can download GSM standards from www.etsi.org.
