Lets say I call someone from my cell phone, and I don't want them to see what my number is on their phone. Can I use *67 with AT&T?

Yes, it should work (FCC law requires this option to be available).
You could also call AT&T and request a permanent block on the phone caller ID and each time you call someone, it would show up Private Name-Private Number.

some phones have a built in caller id blocker you can enable.
