I got a chance to look at a Motorola Xoom at CES. It looks like a great piece of hardware, but unfortunately Android 3.0, or Honeycomb wasn't actually loaded on the device. Moto has a video playing on the Xoom of Honeycomb in action.

Anyway - when asking whether the Xoom would have LTE, I was told that a physical update to 4G LTE would be available which would involve sending the Xoom back to Motorola. I'm going to ponder here and guess that Motorola has already made a bunch of them without LTE and realized that they going to have to do something about that when LTE becomes more popular.
