It basically prevents the phone from doing anything a phone is supposed to do such as ringing/vibrating when calls or texts come in and when I call or pick up when I happen to see that someone's calling, I can't hear anything.
Very frustrating. Please help.

The inability to turn off the Car Kit mode on your LG handset is a sign that the phone was exposed to and damaged by liquid.
There is a suggestion similar to the one listed in the one above on this site for you to try.
LG VX6000 constant Car Kit mode - LG Talk Forum - Mobiledia
There are some pins in your 5200's charger connector port that you could try to short out in order to turn the Car Kit off. Using a small screw driver or other small sharp object, touch a few of the pins on the far right side of the charging port. After doing this a few times, the Car Kit mode should turn off for you. If not, bring it into a Verizon Service center and have a trained technician inspect the handset for you, as Paulcman as said above.
