Good luck getting access to the phone over wifi. You would have better luck with a packet sniffer watching the connection. If something isn't encrypted you can intercept text pretty easily. Intercepting voice would be a little more difficult.

What kind of phone do you have? There might be a sniffer you can run right on your phone.

I know that ikeymonitor works on iPod, but it can not be installed remotely.
