    What recommended web sites or services are there which are simple to set
    up and which let the other party SMS me without showing their number?

    Of course I get lots of Google hits for "free SMS" but ....

    which sites are recommended for being reliable in sending the SMS
    without delay and not collecting mobile numbers or adding particularly
    intrusive text?

    Why would you want to receive anonymous texts? ....would you be able
    to reply to them ? .

    "What recommended web sites or services are there which are simple to
    set up and would let me stalk someone via SMS without showing my
    number?"

    I think what the OP really meant was "how do I send SMS to people
    anonymously", presumably with obscene / threatening content...

    I don't have an answer but
    I think that the OP made it quite clear. He wants to be able to
    receive texts from people without being able to see thier number. Why?
    Well, then he can tell people that their number remains confidential
    to them. It may be that, if the person needs a reply, that they
    include their phone number or email address. Not all texts require a
    reply - it might be a vote on something for example. People don't want
    to be spammed with text messages so they may be rluctant to send a
    text if they think that their number is being harvested. It then just
    depends on whether a texter trust the recipient.
    Remove 'no_spam_' from email address.

    Are you looking to cloak your sender number as someone else, or just
    be anonymous?
    Most SMS API systems provide a means of speciying the sender ID, even
    as alphanumeric charachters
    which may or may not be supported on all phones
