The SPV C500 had the MS instant messaging client installed. Has this
been removed from the M3100 or am I just not looking in the right
place.
If it's not on by default can it (or an alternative) be installed?

Microsoft removed it. There are 3rd party clients around, for example
Agile.

I can't find it on Microsofts site anymore. Not sure what they've done
with it.

It's very uncommon for Microsoft to actually do anything like this for
OEMs - it's usually up to them to customise it as with all deployments
of Windows Mobile and Windows CE (which WM is a specific customisation
of). Judging by how badly most of them did with initial releases of WM5
and how the problems were down to ignoring MS recommendations it
certainly suggests the OEMs were to blame.
Whatever the case, MS would not and did not remove it on their own
decision. I suspect Orange (or a contracted 3rd party, possibly MS)
removed it at Orange's request. Other deployments of the Hermes device
has got MSN Messenger installed and it's an OEM option in the build scripts.
I suspect that it was down to either licensing cost, or stopping people
from using it to avoid making calls/SMS (as with their removal of VOIP
on N95).
