Mobile phone question - Unlocked

I know nothing about mobile phones, and the wife has just had her PAYG phone
nicked. Will an unlocked phone work on PAYG networks?

Going off what you and the others have said, report the one your wife had
stolen to your network so they can bar it and the sim that was in it.

Can't answer your question on whether the phone you have coming in from
abroad will work, although 'nearly' all phones sold in the UK nowadays will
run a PAYG sim if they are unlocked.
