BUT I don't know which mobile network it belongs to.
How can I find this out please? (I want to add the credit as a surprise)

You can't necessarily tell from the number as it may have been ported.
Try calling it when you know it's going to be switched off (withold your
number just in case). Listen to the voicemail prompt and it will
probably tell you [1].
[1] unless the owner has recorded their own message

I don't get this. If the PAYG is yours it will show up on the phone's
screen. The other way is to open the phone and look at the SIM. If it
is not your phone then why can't you ask the person concerned?

You answered the wrong person. But anyway...I have the impression he
wants to buy someone else a surprise present of credit, and doesn't
actually have access to the physical phone as the 'someone' has it.
(oh, and please fix your signature. The separator at the top of the
signature should be two dashes followed by a space. This is the
standardised separator, and will stop replies to you from including it)

Can get the network by dropping something into a casual conversation?
Something like ... oh, i don't know...
- 'I heard about this big problem with Orange's network recently, phones not
working and stuff, aren't you on Orange? have you had any troubles lately'
Hopefully they'll reply somthing like:
- 'No, not that I know of'
or
- 'No, I'm not with Orange, I'm with T-Mobile...'
....Well, it could be worth a shot...

Generally if you ring an orange phone the first ring will be a long
single ring
Otherwise let the phone ring to voicemail and you should be able to
tell (if its a standard, uncustomised greeting ie. "welcome to orange
answerphone" or "this is the vodafone voicemail service for..." etc);
if not press * or # during the voicemail greeting and you might be
able to tell from the voice that interupts. | | | |

Go to pretty much any cash machine. Most of them now have an option to top
up PAYG phones, you just follow the prompts to enter the number when
required. No need to know the network.

Or the OP should be able to topup a mobile from a cash machine - just
select topup and enter the mobile number. I don't know if the recipient
gets a text or something to announce it. This isn't perfect if you want to
wrap the 'present' as it'll come through straightaway... you could wrap the
receipt I suppose.

Do you not have to select the network *before* entering the
mobile number?
You certainly do at German and Czech ATMs - I have never
tried from a UK ATM, so I am prepared for this to be
unnecessary here!

You do have to select the network at a UK ATM.
Why not call them when you know they wont be able to answer the phone, and
see it the voice mail gives you the network name.
