Well, it may depend on which software / network customisations you have
but on mine I get a count down from 23 characters left or so (top right,
above the text box). If you type quickly, you can probably type 160
characters fast enough to get more than 23 characters ahead of the display
in which case you might not see this countdown

It should be possible to disable the Multiple SMS function (again, I
suppose it may be dependant on software versions etc). On mine, you disable
it in:

Messaging/Text/Options/Long Messages

With this disabled it just stops at 160 and will not let you type any more
