I have an old Ericsson A2628s.
If I buy a data cable for it (usb), what will I be able to do? Send SMS?
Manage phonebook? Use as modem?
Those cables are rather expensive and I wouldn't like to end up with little
use...

The main purpose for a data cable is to allow you to transfer data
between your phone and your PC. This is useful for synchronising data so
long as you can be assured that you're computer will have the data when
you need to restore it. So yes Managing your phone book is one of the
main reasons people buy data cables
