I can't seem to find anything in the manual that tells me how to do this. As
it seems to be set on a standard '1234' code at the moment this is pretty
insecure.

IF I've read your question right I think you're a bit off track in your
understanding of bluetooth.
Each connection that is made shares a private passkey. This means that
when you pair 2 phones up you need to enter the same passcode on both
(be it 0000 or 1234 or 9762). Yes 1234 can be used, but it needs to be
used on both phones or the connection will fail.
Bluetooth is connection orientated as well, so you actually need to
accept a bluetooth request to pair, know the passkey that the other user
used and accept the connection. A user cannot go near your phone, search
for new devices and pair to your phone unless you accept the connection
and enter the exact same passkey as they used. This is pretty secure.
Bluetooth accessories (handsfrees, computer uSB keyboards etc) sometimes
have default passcodes that you cannot change. Most of the time this is
ok because to pair it you need to initiate pairing from the device (be
it push a button or a switch), and you have the device in your
possession.
Hope this clears things up a little. If I've misunderstood your question

Standard passkey is 0000

If it's like the T68i, you don't have to. The passcode only applies when
the device is Discoverable, and that only happens when you choose to
make it discoverable through the menu. On the T68i, Discoverable turns
off automatically after 3 minutes.

And now that I think of it, I don't think it actually remembers your
passcode. When you type in 1234, that's what you're making it for just
that connection attempt.
