I just got a V300 and am confused at to which is the best way to store phone
numbers.
I would like to store them to the simm so that I have them if I need to
switch phones but I don't want to lose the additional features you get by
storing to phone.
Before I go and enter all of my numbers I was hoping for some suggestions.
Can they be stored in both places?

Assuming the 300 works like the 500, they can, but there's no need. Store
them all on the phone, then if any time you want to take the numbers to
another phone, just pres the top middle key (with the horizontal lines)
whilst in the phone book and choose 'copy' then 'All to SIM'. They'll all be
copied but missing those entries and fields which cannot be stored in the
SIM. When you bring the SIM back delete the duplicates on the SIM otherwise
you see two entries for eveyone in the phonebook. Don't know if you can
switch that off or not.

Yes, just use the internal copy function.

One thing I noticed is that the voice dial function does not work with
entries that are stored on the simcard, which I guess makes sense since the
simcard is limited on memory.
