I just got a v635 a few days ago, and I am a die hard mac user ;-)

So far, I have not noticed any problems with bluetooth and my mac. I am
using an older mac (Ti Laptop), so I had to get a kensington dongle for
the bluetooth functionality. I am also running 10.4.4, and was able to
sync my address book and calendar to the phone with a couple of clicks
(all with the base OS install, no third party software needed).

I think there are a couple of things to check. I would first look at
the files you are trying to send. iTunes tends to save files as mp4s
NOT mp3s. Double check the import settings in iTunes. Also, make sure
that you are running the latest version of the OS X. Lastly, make sure
that the bluetooth adapter you are using is working properly (this
shouldn't be much of a problem if your computer came with bluetooth...).
