hi!
I'm using motorola V3x. I'm interesting in li-polymer (from ebay-very cheap)
batteries for it. Is it safe? Now, I'm using Li-Ion 840mAh at 3,7V. Can I
use 2000mAh at 3,6V Li-Polymer?

Yes you can but don't expect much. They may seem better for the first
month or so but after that they fall off fast and die.

Personally, I'd stick with OEM batteries. There are too many horror stories
of after-market batteries messing up phones.
