I've copied my phonebook from the SIM card to the phone memory. The result
is that I now have a double phonebook (all the names and numbers are
double).
I have not found where I can choose which memory to use; the phone shows
both phonebooks (I can see the icons telling me if the phonebook entry is in
the phone or in the SIM card).
Is there any way that I can tell it not to show the SIM card phonebook?

I made the same mistake. When copying, you are presented with the option to MERGE or OVERWRITE. When you choose merge you end up getting two copies of everything. I ended up deleting the numbers from the SIM (one at a time) and keeping the numbers stored on the phone.
