How do you move the contacts to the SIM from main memory...
AND, I've set to use BOTH, but every time I add a number, it goes into phone
memory, not to Both?

Well an idea of what phone you are using might help but usually there is a
'copy' option under the phone book menu, and you copy from SIM to phone.
If you save a number it's not going to save it twice.

That depends on the phone. But being as you didn't bother to say which
model you have...

That means when scrolling through the phone book, it will display
entries from both the phone and the SIM - not that it will add new
entries to both
