In the P800 manual it shows the quick-dial screen with names under each
photo. All I can get is the (truncated!) number.
What's the trick to get names to show there? The manual only says that it
all comes from the Contacts book, but I've tried everything I can think of
and nothing makes any difference!

In the speed dial screen tap an empty speed dial position. When the
select contact screen appears, select the contact and tap done. The
first/last/company name (in that order) from the contact automatically
appears under the speed dial icon.
The only way I could get the number to appear under the speed dial icon
was to enter it in one of the name fields.

Nope - still doesn't work.
I managed to track the problem down as far as the fact that I'm using a
single contact in multiple quick-dial positions, e.g. I have my wife's work
AND mobile numbers on quick dial - if I only use one of her numbers on quick
dial then her name appears under the one entry. If I add her a second time
with a different number, the name disappears and under both of them are now
numbers, presumably, because the phone thinks I wouldn't remember which is
which! Not that the numbers help, because I can only see the first few
digits anyway, so they both look the same!!! Ministry of Crap Design at work
on that nice little 'feature'!

The number appears instead of the name when you put the same contact in
more than one position on the speed dial. Typically when you do that you
are putting, for example, the home and work numbers for a person on two
speed buttons. The number allows you to differentiate. I don't think
this is adjustable.

Yep. Thanks - that seems to confirm my findings. What a bloody stupid
'feature'. I can only see the first 7 characters of each number *anyway*, so
they all look alike! I've as much idea as to which is which as I would if
the name was repeated! I suppose the idea that behind the scenes (if I
*could* see the whole number) is that each entry on the quick dial screen is
unique.
Can you imagine the design meeting where more than one person agreed this
was the way it was going to work?! Pathetic...

Clever idea. It makes the Contacts book a bit messy, but definitely works
though. I'll just create a series of special Contact entries for my
quick-dial numbers.
