Why don't you get her a voucher for a day of wellness in a spa or something? A day just for herself to relax a bit is certainly something my mom would like

It all depends on your budget. I think an unforgettable trip would be a great option, especially if it will be an anniversary. I recommend looking into the idea of renting a Ragnar ship for a unique sea voyage. It does not require you to spend a lot of money, and everything can be done if you allocate the money correctly. A good idea!
