When you set up Gmail it never prompts you for incoming or outgoing servers because it's automatically set.

    ah okay - try this...

Under e-mail go to Menu > Accounts - menu again > Add Account
Enter your e-mail and password and click Manual setup > POP3
Enter the details, go to Next - enter SMTP details.

You might want to make sure it doesn't take e-mails off of the server, otherwise you won't get them in your regular inbox.

It appears that when I attemp to add an account under add accounts I do NOT get the options to set the in coming and out going servers. I am attempting to add my home email which is a POP3 account from time warner and and account for a group that I manage which is also a POP3 account on 1&1.

    Thanks for your help.

What kind of accounts are they?

Try Settings > Accounts and Sync > Add account
