I guess the only good way is to connect to iTunes and sync. In sync settings, uncheck everything but Contacts. Sync contacts with Windows Contacts. When you get your new iPhone, connect it to iTunes and check its Contacts sync with Windows Contacts again. That should not affect your music (I guess) and backup your contacts too. In this way, you can transfer your contacts from iPhone to Mac successfully.

or you can also go through the info page in itunes for your phone and sync contacts from the phone to the computer that way by checking the box that says sync contact to then select address book.
There is a step by step instruction on How to transfer iPhone contacts to my iMac.
Hope it can do you a favor.
Do you have an iPhone running os5? If so just set up iCloud on your phone and your Mac.

iTunes will also sync your contacts back to the address book on your Mac.
