If I press and hold a number key, I'll dial the phone number stored in that
slot number. How can I choose a two-digit address book entry slot number?
The numbers I most want on speed dial are scattered throughout my address
book and I've got only five slots left out of 100!

The feature you already use is Turbo Dial, to use speed dial for 2-digit
Speed Dial entries use the following steps:
1-Press MENU until you see the "Spd#" option
2-Press Option button (button with dot) under "Spd#"
3-Using the keypad, press the Speed Dial number
    4-Press SEND
