Is there a way to remove or change the original providers data from a phone?

Example, I have an unlocked Sony k790i, I have it now on FIDO. However, the shutdown screen is the Rogers logo. additionally, I have some sort of icon of a globe for 'Rogers Mall' and when I hit music I get 'Rogers Music Player'.

Is there not a default 'Sony' setting for these?
