I've just upgraded to a Nokia N73 on O2 and its working very well, but
whenever I make or recieve a call, it pops up asking which access point
I would like to use (during the call - the message is still there when I
go to hang up or type a number in etc)
Question is - how can I stop it doing this, and why is it trying to make
a data connection whenever I make/recieve a call?

No idea why it's popping up there, but I have a Nokia e61 which runs
the same kind of software as the N73 and 'select access point' pops up
so that I can select a GPRS or WiFi connection to check email, etc.
If I tell it not to prompt for an access point then it'll just use the
default I specify.
Do you have any applications like WorldMate with yours that run in the
background and log in to anything like email, WWW or anything else
running that could be requesting the connection?

There's absolutely nothing else running. The only other thing running
was the Antivirus (checked by holding down the menu button), so I've
closed that and it still does it.
If I dial a number, it literally pops up as soon as it changes from
"calling" to "call 1"
I'd really like to know exactly what data it's sending where, before I
tell it to go ahead use it anyway

Virus checker isn't looking for updates, or trying to download them,
is it?
Does it only do this when you attempt to make/receive a phone call or
do sending a test message to it too?

Nope because it does it even with the antivirus disabled and closed

Only when I make/recieve a call. Even if I use the browser it doesnt pop
up, it just connects and gets on with it. If I select the Mobile Web
access point, you can see it connect for a few seconds then disconnects
again

Get it to connect to your WiFi network at home and then snoop via the
router to see where it's trying to get to.
Your phone doesn't do Skype or similar stuff too, by any chance?

No idea, I don't have an N73.
I suggest the OP contacts his SP to ask what it could be.

It might be that it wants to know whether you are going to skype over
wifi, or a proper cellphone call.
And maybe it needs settings for Skype.
