After seeing the original question in this thread, I went to cdg.org, to the
following link http://www.cdg.org/worldwide/index.asp . I picked Asia, then
China, and as you can see from that screen, only China Unicom shows up as a
provider, and the areas where 800 Cellular service is afforded.
I also went into SPCS's international roam page, and there was no CDMA/PCS
coverage listed for China, nor any listing for Hong Kong within the 15,000
city listings for China.
Just now, I went back to the cdg.org site, and noticed a separate link for
Hong Kong, which does show 2G 800 CDMA coverage by Hutchinson. When clicking
on the Hutchinson link, it still shows only 800 service. Doing some further
digging, here's the English version of OrangeHK's service in Hong Kong.

Hutchison (OrangeHK) just started up their CDMA voice
network. Probably not many locals will sign up for CDMA
unless they need high speed data, until all of China
migrates to CDMA. AFAIK, up until now, the CDMA network
was used only for data. You're going to pay outrageous
fees for roaming from Sprint. If you don't need to be
reached at your regular number, it's better to get an
unlocked GSM phone and a prepaid SIM card. Leave your
phone at home and put a greeting on your voicemail with
your HK number.
If you go their web site, they let you choose GSM or CDMA
but they have no CDMA handsets.
