Does anyone know of a program that will let me edit or work on a
calendar on the PC and then transfer the results to the Sanyo 8100 via
    a data cable?

Unfortunately that is one of the two features you can't do on the 8100 from
what I know of. The product above has a phone book manager, Internet Data
Connect, Ring Composer and Image Editor but now SMS Manager and Calendar
    Support.

It's pretty hard to transfer anything using the data cable. You
either need proprietary software (like FutureDial's) or you have to
reverse engineer the protocol. Sprint won't provide details to the
    general public.

Of course, it's easy to do what you are asking using any of the PDA
phones. You may want to consider a Handspring or PocketPC type of
    phone.

Baring that, it depends on what you mean by "transfer the results" to
your 8100. You could, for example, send all of your appointments to
your phone as text messages. The phone will store the messages for
later reference. That doesn't get them into the calendar on your
phone, but it at least gets the data into your phone.

You may consider using an on-line service like Yahoo. They provide
free software to sync your Yahoo calendar with Outlook and then they
will send text messages to your phone (based on your calendar) to
remind you of meetings. So, the data is not on your phone but your
phone will beep a reminder 15 minutes before your appointment. That
is the point after all, right?

You can also use the wap browser in your phone to view your Yahoo
calendar online. Again the data isn't stored in your phone, but you
can still browse through the events you entered on your PC.

The next step would be to use a J2ME calendar MIDlet on your 8100.
You could transfer data into it over the air. You would create
appointments on your PC, upload the data to a server someplace, then
your phone would download the data into your calendar MIDlet. I don't
know of any software like that currently available, but you could
certainly write something to do the job.
